Easy Jerk Chicken Recipe
Jerk is a sort of rub that comes from the island of Jamaica. The savory/sweet combination of fresh ginger and habanero chili give jerk its distinctive kick. Our version of this tasty concoction also incorporates allspice, cinnamon and coriander for an aroma that frankly just kicks ass. Have your posse stand by while you carve this baby up and you will see what we mean.
You can throw this intense and flavorful wet rub together in about 20 minutes, then use it as you would any other chicken rub with the Official Beer Can Chicken Blog Recipe.
Jerk is typically spicy, but this recipe just gives the chicken a nice bite (mostly just on the skin) without making the whole bird spicy. If you want to push it up a few notches you could increase the habanero content. Here’s how you do it.
Jerk Rub Recipe:
Put everything in a food processor. Start mulching on a low setting, stirring occasionally to make sure the bigger chunks of garlic and ginger get chopped up. Once you have it breaking down, turn up the speed until you get a good paste-like consistency. Ooh Damn! Can you smell that Jerk flavor? If you have time, let the paste sit for a while in the fridge before you prep your bird. Ideally you want to apply the wet jerk paste about 2 hours before you take it out to put on the beer can. You can double the batch and freeze it, but with the fresh ginger it’s really better to use it up right away.
- 2 tablespoons olive oil
- 4 tablespoons fresh peeled and chopped ginger
- 4 peeled Garlic cloves
- 1 teaspoon allspice
- 1 tablespoon brown sugar
- 1 & 1/2 teaspoon kosher or sea salt
- 1 & 1/2 teaspoon dried coriander
- 1 & 1/2 teaspoon fresh ground black pepper
- 1/2 teaspoon dried thyme
- 1/4 to 1/2 teaspoon habanero chili powder (this stuff’s hot – don’t get it in your eyes) You could also sub cayenne, but habanero has an intense heat that’s hard to match.
- 1/4 teaspoon cinnamon
Apply the spicy rub and let the bird rest for several hours (if you have time) to absorb as much flavor as possible. After that proceed as per the Basic Awesome Recipe for Beer Can Chicken.
